Ingredients

  • cooking spray
  • ½ cup butter
  • ¾ cup white sugar
  • 1 large egg, beaten
  • 1 cup quick-cooking oats (such as Quaker)
  • 3 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and grease with cooking spray.
  2. Heat butter in a microwave-safe bowl in the microwave until melted.
  3. Add sugar and stir to combine. Add beaten egg and mix well. Stir in oats, flour, vanilla, salt, and baking powder.
  4. Drop spoonfuls of dough 3 inches apart onto the prepared baking sheet as the dough will spread.
  5. Bake in the preheated oven until edges are golden brown, about 8 minutes.
  6. Let cookies cool completely before removing them from the baking sheet.
