Easy and regular ingredients / takes 1+ hour.
Ingredients:
(this is 1/2 recipe, but is a full meal)
1 pound ground beef
1/2 small finely diced onion
1/4 cup finely diced bell pepper
3/4 sleeve crushed Ritz crackers
1/2 cup shredded sharp cheddar or Colby cheese
1 egg (full recipe uses 3 eggs, but I only use 1 for 1/2 recipe)
1/4 cup milk
1/2 tsp salt
1/8 tsp pepper
For the topping;
1/2 cup ketchup
2 Tbsp brown sugar
1 tsp mustard
Instructions:
Preheat oven to 350.
In large bowl, combine eggs, crushed ritz crackers, cheese, milk, onion, bell pepper, salt and pepper. Mix well.
Add in ground beef. Mix well just to combine. Do not over mix.
Form into a loaf and place inside a baking pan or baking sheet lined with foil.
Bake 350 for 30 minutes.
In small bowl, combine ketchup, brown sugar and mustard.
Remove meatloaf from oven and spread the topping on top.
Bake for an additional 30-40 minutes.
Let cool before serving.
