Chicken Salad versions

great for lunch or to bring a dish

Autumn Chicken Salad:

3 cups chopped cooked chicken

1 cup chopped seedless red grapes

3 celery ribs, chopped

1 medium size Red Delicious apple, chopped

1/2 cup Diamond of California shelled pecan halves, totasted

1/2 cup mayonnaise

1/4 cup honey mustard

1/2 tsp salt

1/4 tsp pepper

lettuce leaves

Instructions:

Stir together first 9 ingredients in large bowl. Cover and chill. Serve on lettuce leaves.

Poppy Seed Chicken Salad (also Tropical version)

2 cups prepared chicken salad – i prefer chunky for this

1/4 cup poppy seed salad dressing

1/2 cup toasted or roasted pecans (substitute macadamia nuts for tropical)

1/2 cup halved seedless green or red grapes (substitute chopped pineapple for tropical)

crackers of pita chips

1/2 cup coconut – optional, for tropical only

Instructions:

Combine first 4 ingredients in a bowl. Cover and chill until ready to serve. Serve with crackers or pita chips. (if using tropical, stir in coconut)
