Chicken & Biscuits

oldie but goodie

Ingredients:

1/2 small onion

1/2 Tbsp butter

4 cups chopped cooked chicken (about 1 3/4 pound)

1 can cream of chicken soup

1 cup sour cream – i use less fat

1/2 cup milk – 2% is fine

1/2 cup chopped pimiento (small jar)

1 cup shredded mild cheddar cheese, divided

6 frozen biscuits, thawed (I use Butter Tastin from the can)

Instructions:

Preheat oven to 350. Grease bottom and sides of 11×7 baking dish.

Chop onion. Heat butter in small skillet over med-high heat until melted. Stir in onion. Saute until tender.

Combine onion, chicken, soup, sour cream, milk and pimiento in medium bowl and mix well. Spoon mixture into prepared baking dish. Bake 15 minutes. Remove from oven.

Sprinkle baked layer with 3/4 cup of cheddar. Arrange biscuits in single layer over top. Sprinkle with remaining cheddar.

Bake until biscuits are golden brown and sauce is bubbly, about 20-25 minutes longer. Serve immediately.
