Old-Fashioned Potato & Bacon Soup*

Ingredients:

4 diced russet potatoes

6 slices chopped bacon

1 diced onion

3 minced garlic cloves

4 cups broth (beef?)

1 cup heavy cream (or milk)

salt, pepper, tyme to taste

cheddar for garnish

Instructions:

Cook bacon: crispy bacon in pot, set aside.

Saute veggies: cook onion and garlic in bacon drippings.

Add potatoes and broth: simmer until tender.

Blend: Blend until smooth, or keep chunky.

Add cream and season: stir in cream, salt and pepper.

Serve: top with bacon, cheese.
