Crispy Crunchy Parmesan Potatoes*

Ingredients:

2 pounds baby potatoes, halved or quartered

3 Tbsp olive oil

1 cup grated parmesan cheese

1 tsp each garlic powder, onion powder, paprika, dried thyme

salt and pepper, to taste

fresh parsley, chopped for garnish

Instructions:

Preheat oven to 425. Line a large baking sheet with parchment paper.

In large mixing bowl, combine grated parmesan cheese, garlic powder, onion powder, paprika, dried thyme, salt and pepper.

Add the halved or quartered potatoes to the bowl with parmesan mixture. Drizzle olive oil over potatoes. Toss everything together until potatoes are evenly coated with the cheese and seasoning mixture.

Arrange coated potatoes in single layer on prepared baking sheet, cut side down for maximum crispiness.

Bake in preheated oven for 25-30 minutes, or until potatoes are golden brown and crispy on outside and tender on inside. Flip the potatoes halfway through baking time for even crispiness.

Remove potatoes from oven and garnish with fresh chopped parsley if desired.
