Ingredients:
4 boneless, skinless chicken breasts
salt and pepper to taste
1 sleeve Ritz crackers crushed
1/2 cup grated parmesan cheese
1/2 cup unsalted butter melted
1 cup sour cream
1 can cream of chicken soup
1/2 cup chicken broth
Instructions:
Preheat oven to 375. Grease 9×13 baking dish.
Season chicken with salt and pepper then place in prepared dish.
Spread sour cream over chicken in baking dish.
In a mixing bowl, mix together cream of chicken soup and chicken broth until smooth. Pour the mixture over chicken and sour cream layer.
In another bowl, combined crushed Ritz crackers, grated parmesan cheese, and melted butter. Mix well to coat crackers. Sprinkle Ritz cracker mixture evenly over top of casserole.
Bake 40 minutes until chicken is cooked and topping golden brown and crispy.
Remove from oven and let casserole rest for a few minutes before serving.
