Crockpot French Onion Meatloaf with Melted Swiss Cheese*

Ingredients:

2 pounds ground beef

1 packet French onion soup mix

1 cup breadcrumbs

1/2 cup milk

2 eggs, beaten

1/4 cup ketchup

1 tablespoon Worcestershire sauce

1 cup caramelized onions

1 cup Swiss cheese, sliced

Fresh thyme, for garnish

Instructions:

Prepare the meatloaf mixture: In a large bowl, combine the ground beef, French onion soup mix, breadcrumbs, milk, beaten eggs, ketchup, and Worcestershire sauce. Mix until just combined; do not overwork the meat.

Form the meatloaf: Shape the mixture into a loaf and place it in the crockpot.

Cover and cook on low for 6-7 hours or on high for 3-4 hours, or until the internal temperature reaches 160°F (71°C).

Add caramelized onions and cheese: During the last 30 minutes of cooking, spread the caramelized onions over the top of the meatloaf and lay the Swiss cheese slices on top. Cover and cook until the cheese is melted and bubbly.

Carefully remove the meatloaf from the crockpot. Slice and garnish with fresh thyme for a touch of color and flavor.

Serve with mashed potatoes or a side of green beans for a complete, comforting meal.

2 pounds ground beef

1/2 cup grated parmesan cheese

1/4 cup milk

2 eggs

1 Tbsp Worcestershire sauce

1 tsp salt

1/2 tsp black pepper

2 large onions, thinly sliced

2 Tbsp butter

1 cup beef broth

8 slices Swiss cheese

Instructions:

In large bowl, combine ground beef, breadcrumbs, parmesan cheese, milk, eggs, worcestershire sauce, salt, and pepper. Mix until well combined.

Form the meat mixture into a loaf and place in crockpot.

In skillet, melt butter over medium heat and add sliced onions. Cook until caramelized, about 20-25 minutes (or a lot less..)

Add beef broth to the onions and cook until the liquid is absorbed. Pour the caramelized onions over the meatloaf in the crockpot.

Cook on low for 6-8 hours, or until meatloaf is cooked through.

About 10 minutes before serving, top the meatloaf with swiss cheese and allow it to mel.
