Ingredients:
1 cup unsalted butter, softened
1 cup brown sugar, packed
2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract
1 large egg
1 1/2 cups chopped pecans
1/2 cup mini chocolate chips (optional)
powdered sugar for dusting
Instructions:
Preheat the oven to 350. Line a baking sheet with parchment.
Make the dough:
In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add the egg and vanilla extract, beating until fully combined.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until combined. Fold in the chopped pecans (and mini chocolate chips, if using)
Shape the Cookies:
Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing about 2 inches apart.
Bake for 12-15 minutes, or until golden brown and edges slightly crisp.
Let cookies cool on baking sheet for 5 minutes before transferring to wire rack to cool completely.
Once cooled, dust the cookies with powdered sugar for festive touch.
For extra gooey center, underbake by 1-2 minutes
Can be frozen in airtight container.
